  • Freshly ground pepper
  • 1/4 cup chopped fresh parsley
  • 1/2 cup grated parmesan cheese 

Step 1: Preheat your oven to 450 degrees and then put your potatoes in a large pot and cover them with cold water (1 inch).

Step 2: Season with salt and bring your potatoes to a boil and cook over medium-high heat until just tender, about 7 minutes. Then drain.

Step 3: Put your bread crumbs and add olive oil, lemon zest, 1 tbsp salt and a few grinds of pepper in a large bowl. Add the potatoes to it.
