To make Shahi tukda, all you need is:

For the Rabri:

- 3 cups milk

- 3 tbsp sugar

- 3 small elachi, seeds crushed

- 4-5 saffron strands

For the sugar syrup:

- 1/4 cup sugar

- 1/4 cup water

- 4-5 saffron strands

- 3 tbsp ghee

- 5 slices of bread, cut into half

- chopped nuts (optional)

- In a large saucepan, boil milk until it reduces to half. Stir occasionally. This will take about 20-25 minutes.

- Add sugar, elachi seeds and saffron strands and cook for another 5-10 minutes. Let the mixture cool and refrigerate.

- In another saucepan, heat sugar and water until the sugar melts completely. Add saffron strands and let the syrup cook until it thickens into a thread-like consistency. This should take about 5-7 minutes. Set aside the syrup.

- In another pan, heat ghee and fry the halved bread slices until they’re golden brown. Place them on a tissue paper to get rid of extra ghee.

- Pour sugar syrup onto the bread slices, followed by the chilled rabri. Garnish with chopped nuts!
